Co kdy\u017e u\u017e je ale j\u00eddlo na stole a neodpov\u00edd\u00e1 p\u0159edstav\u00e1m hosta?<\/strong><!--more--><\/p>\n<p><!--more--><br \/>\nV \u010cesku st\u00e1le p\u0159evl\u00e1daj\u00ed restaurace, kter\u00e9 host\u016fm nab\u00edzej\u00ed nekvalitn\u00ed polotovary a lacin\u00e9 n\u00e1hra\u017eky. U\u017e j\u00eddeln\u00ed l\u00edstek m\u016f\u017ee host\u016fm napov\u011bd\u011bt, zda si objednaj\u00ed j\u00eddlo nebo by m\u011bli rad\u011bji odej\u00edt. \u201ePokud menu obsahuje nesmysln\u00e9 mno\u017estv\u00ed polo\u017eek, je tak\u0159ka jist\u00e9, \u017ee pou\u017eit\u00e9 suroviny nejsou kvalitn\u00ed a \u010derstv\u00e9. Restaurac\u00ed, kter\u00e9 nab\u00edzej\u00ed velk\u00e9 mno\u017estv\u00ed j\u00eddel v n\u00edzk\u00e9 kvalit\u011b, je v \u010cesku st\u00e1le v\u011bt\u0161ina. Zn\u00e1mkou kvalitn\u00ed restaurace m\u016f\u017ee b\u00fdt i otev\u0159en\u00e1 kuchy\u0148. Kucha\u0159 tak d\u00e1v\u00e1 host\u016fm mo\u017enost sledovat, jak\u00e9 suroviny pou\u017e\u00edv\u00e1 a jak cel\u00fd pokrm p\u0159ipravuje. Jist\u00fdm ukazatelem kvality mohou b\u00fdt tak\u00e9 ceny j\u00eddel. Restaurace nab\u00edzej\u00edc\u00ed pokrmy kolem 70 korun nejsou schopn\u00e9 p\u0159ipravovat je z \u010derstv\u00fdch a kvalitn\u00edch surovin. Jednodu\u0161e by zkrachovaly,\u201c vysv\u011btlil Tom\u00e1\u0161 Vobo\u0159il, majitel restaurace Podolka.<\/p>\n<p>Host\u00e9 nemaj\u00ed argumenty. I kdy\u017e lidem na stole p\u0159istane pokrm nev\u00e1bn\u00e9 v\u016fn\u011b, vzhledu a chuti, zpravidla ho zaplat\u00ed a je\u0161t\u011b daj\u00ed obsluze spropitn\u00e9. \u201eProbl\u00e9mem \u010cech\u016f nen\u00ed to, \u017ee by si neum\u011bli st\u011b\u017eovat, ale to, \u017ee neum\u011bj\u00ed svou reklamaci obh\u00e1jit. V\u011bd\u00ed, jak m\u00e1 chutnat sv\u00ed\u010dkov\u00e1, \u0159\u00edzek nebo gul\u00e1\u0161, u netradi\u010dn\u00edch pokrm\u016f si ale nejsou jist\u00ed, a i kdy\u017e podle nich n\u011bco nen\u00ed v po\u0159\u00e1dku, ml\u010d\u00ed a zaplat\u00ed. Spropitn\u00e9 zaplat\u00ed t\u0159i \u010dtvrtiny \u010cech\u016f, i kdy\u017e jsou s j\u00eddlem nespokojeni. Pokud je j\u00eddlo t\u0159eba p\u0159esolen\u00e9, nedova\u0159en\u00e9 nebo naopak maso p\u0159epe\u010den\u00e9, host ho nemus\u00ed po reklamaci v\u016fbec platit, nato\u017e d\u00e1vat tuz\u00e9r. Jin\u00e9 je to v p\u0159\u00edpad\u011b, \u017ee si objedn\u00e1 pokrm, kter\u00fd nezn\u00e1: kdy\u017e pak navzdory tomu, \u017ee je p\u0159ipraven\u00fd spr\u00e1vn\u011b, usoud\u00ed, \u017ee by m\u011bl vypadat nebo chutnat jinak, jedn\u00e1 se o chybu hosta a m\u011bl by \u00fatratu zaplatit,\u201c doporu\u010dil Tom\u00e1\u0161 Vobo\u0159il. <\/p>\n<p>Probl\u00e9mem m\u016f\u017ee b\u00fdt i gram\u00e1\u017e. I kdy\u017e maso chutn\u00e1 skv\u011ble, ale nev\u00e1\u017e\u00ed tolik, kolik ud\u00e1v\u00e1 j\u00eddeln\u00ed l\u00edstek, m\u00e1 host pr\u00e1vo nechat si ho p\u0159ev\u00e1\u017eit. \u201eV p\u0159\u00edpad\u011b, \u017ee se v\u00e1ha nevejde do schv\u00e1len\u00e9 odchylky, kter\u00e1 je u masa 20 procent, m\u016f\u017ee host odej\u00edt bez placen\u00ed nebo po\u017e\u00e1dat o novou porci. D\u016fle\u017eit\u00e9 je, aby host na chybu upozornil okam\u017eit\u011b, jak ji odhal\u00ed.  Sn\u00edst cel\u00e9 j\u00eddlo a potom si obsluze st\u011b\u017eovat na jeho nedostatky, je \u0161patn\u011b a je logick\u00e9, \u017ee restaurace chce potom konzumaci zaplatit. Host\u016f, kte\u0159\u00ed j\u00eddlo reklamuj\u00ed a\u017e pot\u00e9, co ho sn\u011bd\u00ed, je v\u011bt\u0161ina,\u201c \u0159ekl Tom\u00e1\u0161 Vobo\u0159il.<\/p>\n<p>Mezi lidmi jsou st\u00e1le popul\u00e1rn\u011bj\u0161\u00ed ryby. \u010ce\u0161i jich ro\u010dn\u011b zkonzumuj\u00ed kolem \u0161esti kilogram\u016f na osobu. Velk\u00e1 \u010d\u00e1st z nich ale nedok\u00e1\u017ee poznat \u010derstvou rybu od mra\u017een\u00e9. Kucha\u0159i je zase neum\u011bj\u00ed zpracovat. \u201e\u010castou ot\u00e1zkou je, zda je v tuzemsku v\u016fbec mo\u017en\u00e9 dostat \u010derstvou rybu. Pokud je ryba spr\u00e1vn\u011b zachlazen\u00e1 a ulo\u017een\u00e1 v ledu, vydr\u017e\u00ed \u010derstv\u00e1 a\u017e \u010dty\u0159i dny. \u010cerstv\u00e1 ryba nesm\u00ed p\u00e1chnout, nem\u016f\u017ee m\u00edt do \u0161eda zbarven\u00e9 maso ani bahnitou strukturu. Probl\u00e9m je i v kucha\u0159\u00edch. Ti \u010dasto neum\u011bj\u00ed s mo\u0159sk\u00fdmi rybami pracovat. Pom\u011brn\u011b \u010dasto tak kvalitn\u00ed rybu znehodnot\u00ed,\u201c \u0159ekl Tom\u00e1\u0161 Vobo\u0159il. <\/p>\n<p>Poznat dom\u00e1c\u00ed suroviny ale nen\u00ed jednoduch\u00e9. Nap\u0159\u00edklad k p\u0159\u00edprav\u011b t\u011bstovin se \u010dasto pou\u017e\u00edvaj\u00ed stroje, kter\u00e9 i z dom\u00e1c\u00edch t\u011bstovin ud\u011blaj\u00ed perfektn\u00ed tvary nerozeznateln\u00e9 od kupovan\u00fdch. Jist\u00e9 odchylky v\u0161ak host\u00e9 rozpoznat mohou. \u201eV\u0161echny restaurace nemaj\u00ed mo\u017enosti vyr\u00e1b\u011bt si vlastn\u00ed t\u011bstoviny, potom je ale podstatn\u00e9 d\u016fkladn\u011b vyb\u00edrat dodavatele. Ru\u010dn\u011b d\u011blan\u00e9 t\u011bstoviny maj\u00ed na\u017eloutlej\u0161\u00ed barvu, nejsou \u00fapln\u011b hladk\u00e9 na povrchu, b\u00fdvaj\u00ed zpravidla o n\u011bco tlust\u0161\u00ed a nemaj\u00ed mdlou chu\u0165. Pokud ale kucha\u0159 dom\u00e1c\u00ed t\u011bstoviny zalije kupovanou om\u00e1\u010dkou a zasype lacin\u00fdm s\u00fdrem, naprosto je znehodnot\u00ed,\u201c upozornil Tom\u00e1\u0161 Vobo\u0159il.<\/p>\n<p>S rozpozn\u00e1n\u00edm kvalitn\u00edho v\u00fdvaru je to je\u0161t\u011b slo\u017eit\u011bj\u0161\u00ed. Firmy vyr\u00e1b\u011bj\u00edc\u00ed r\u016fzn\u00e1 dochucovadla a kostky se v\u00fdsledn\u00fd vzhled v\u00fdvaru sna\u017e\u00ed co nejv\u00edce p\u0159ibl\u00ed\u017eit tomu poctiv\u00e9mu. \u201eV restaurac\u00edch u\u017e se nepou\u017e\u00edvaj\u00ed pr\u00e1\u0161kov\u00e9 buj\u00f3ny, ale r\u016fzn\u00e9 pasty. Ty u\u017e um\u011bj\u00ed vytvo\u0159it i mastn\u00e1 oka identick\u00e1 t\u011bm, kter\u00e1 d\u011bl\u00e1 poctiv\u00fd v\u00fdvar. V\u00fdrobci ale st\u00e1le nejsou schopni ovlivnit v\u016fni, v\u00fdvar z kostky je c\u00edtit po chemii.
