Matka a dcera spole\u010dn\u011b va\u0159\u00ed v rodinn\u00e9m podniku La Feni\u00e8re v Lourmarinu na jihov\u00fdchod\u011b Francie. Je to restaurace vyznamenan\u00e1 michelinskou hv\u011bzdi\u010dkou, kde jsou v\u0161echna j\u00eddla \u00fapln\u011b bez lepku, p\u00ed\u0161e agentura AFP.<\/strong><br \/>\n<!--more--><\/p>\n<p>Jako mal\u00e1 m\u011bla Nadia alergii na lepek a na lakt\u00f3zu. &#8222;P\u0159ed 35 lety v\u0161ak l\u00e9ka\u0159i celiakii (onemocn\u011bn\u00ed zp\u016fsoben\u00e9 nesn\u00e1\u0161enlivost\u00ed lepku) neznali,&#8220; \u0159\u00edk\u00e1. P\u0159estala r\u016fst a v dev\u011btadvaceti letech byla hospitalizov\u00e1na. &#8222;L\u00e9ka\u0159i mi \u0159ekli, \u017ee jsem si zni\u010dila imunitn\u00ed syst\u00e9m,&#8220; vzpom\u00edn\u00e1. Nadia str\u00e1vila dva roky na l\u016f\u017eku, ne\u017e se zjistila p\u0159\u00ed\u010dina nemoci: lepek.<\/p>\n<p>Nadia, kterou velmi bavila chemie a gastronomie, na\u0161la ve sv\u00e9 matce Reine nad\u0161en\u00e9ho spojence, kter\u00fd rychle vym\u011bnil klasick\u00e9 produkty za bezlepkov\u00e9.<\/p>\n<p>&#8222;Nen\u00ed tak snadn\u00e9 naj\u00edt z\u00e1kladn\u00ed produkty. Ale Nadia sehnala v\u0161echno, j\u00e1 u\u017e jsem jenom zkou\u0161ela,&#8220; up\u0159es\u0148uje Reine.<\/p>\n<p>Restaurace La Feni\u00e8re, kter\u00e1 si z\u00edskala jednu hv\u011bzdi\u010dku v michelinsk\u00e9m pr\u016fvodci, se stala ve Francii prvn\u00edm gastronomick\u00fdm za\u0159\u00edzen\u00edm, kter\u00e9 nab\u00edz\u00ed stoprocentn\u011b bezlepkov\u00e9 produkty.<\/p>\n<p>&#8222;Nahradila jsem gastronomii s lepkem gastronomi\u00ed bezlepkovou,&#8220; vysv\u011btluje Reine. Z\u00e1kazn\u00edci p\u0159e\u0161li na novou stravu, ani\u017e by si toho pov\u0161imli, uji\u0161\u0165uje \u0161\u00e9fkucha\u0159ka, jej\u00ed\u017e restaurace nab\u00edz\u00ed menu za 55 eur (1480 K\u010d) m\u00edsto 110 eur, aby je lid\u00e9 vyzkou\u0161eli.<\/p>\n<p>&#8222;C\u00edlem na\u0161eho projektu bylo, aby v\u0161ichni mohli j\u00edst u stejn\u00e9ho stolu,&#8220; \u0159\u00edk\u00e1 Nadia, kter\u00e1 se pustila do vzd\u011bl\u00e1v\u00e1n\u00ed v\u00fdznamn\u00fdch \u0161\u00e9fkucha\u0159\u016f v\u0161ude ve sv\u011bt\u011b, ale tak\u00e9 ve vzd\u011bl\u00e1vac\u00edch centrech pro budouc\u00ed kucha\u0159e, aby je upozornila na alergenn\u00ed problematiku a potravinovou bezpe\u010dnost.<\/p>\n<p>P\u016fvod a zp\u016fsob zpracov\u00e1n\u00ed potravin jsou velmi d\u016fle\u017eit\u00e9, vysv\u011btluje Nadia. P\u0159edev\u0161\u00edm je t\u0159eba vyb\u00edrat v\u00fdjime\u010dn\u00e9 potraviny od v\u00fdrobc\u016f, jako je nap\u0159\u00edklad r\u00fd\u017ee od p\u011bstitele z kraje Camargue, kter\u00fd produkuje bez pesticid\u016f a plevel u n\u011bho sp\u00e1saj\u00ed kachny. Vep\u0159ov\u00e9 maso zase poch\u00e1z\u00ed od chovatele z regionu na severu poho\u0159\u00ed Luberon, kter\u00fd krm\u00ed prasata cizrnou beran\u00ed. Ryby zase poch\u00e1zej\u00ed z Martiques nedaleko Marseille.<\/p>\n<p>Velmi obl\u00edben\u00e9 jsou lan\u00fd\u017ee v t\u011bst\u00ed\u010dku, na n\u011b\u017e se pou\u017e\u00edv\u00e1 mouka z ka\u0161tan\u016f a merl\u00edku chilsk\u00e9ho.<\/p>\n<p>Hlavn\u00edm desertem je Paris-Lourmarin, obdoba francouzsk\u00e9ho mou\u010dn\u00edku Paris-Brest v podob\u011b koruny pln\u011bn\u00e9 zel\u00edm, na n\u011b\u017e se pou\u017e\u00edv\u00e1 mouka z tykv\u00ed a mandle.<\/p>\n<p>Chl\u00e9b, kter\u00fd je samoz\u0159ejm\u011b tak\u00e9 bezlepkov\u00fd, se pe\u010de v n\u00e1dob\u00e1ch z kameniny. &#8222;Nadchlo m\u011b pe\u010den\u00ed chleba ve star\u00e9m Egypt\u011b, p\u0159i n\u011bm\u017e se pou\u017e\u00edvaly kameny. Mouka tehdy byla na lepek velmi chud\u00e1. Pak se lepek p\u0159id\u00e1val, zvl\u00e1\u0161t\u011b do chleba a baget, aby se nafoukly,&#8220; vysv\u011btluje Madia.<\/p>\n<p>Reine i Nadia Sammutovy si jsou v\u011bdomy toho, \u017ee bezlepkov\u00e9 potraviny jsou dnes v m\u00f3d\u011b. &#8222;Pro n\u00e1s to ale znamen\u00e1 aktivn\u00ed uv\u011bdom\u011bn\u00ed t\u00e9to skute\u010dnosti.
